Scallops, whether king-sized or queen-sized are delicate and suffer from overcooking very easily. One way to prevent this is wrapping them in bacon. This prevents overcooking and also adds extra flavor.

This is a quick and easy recipe for fresh scallops and makes a good starter dish or can be served as a canape at parties.

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients:

  • ¼ cup dry sherry
  • 1 tsp white sugar
  • 1 lb/450g fresh queen scallops
  • 12 slices smoked streaky bacon, cut in half lengthways
  • 12 water chestnuts, cut in half crossways
  • Salt and pepper

Preparation:

  • In a large bowl mix sherry and sugar together. Add the Queen Scallops and leave to marinade for 1 hour.
  • Place one Queen Scallop and slice of water chestnut on a strip of bacon and roll up.
  • Secure the parcel with either a toothpick or a skewer. Repeat for each Queen Scallop.
  • Grill each parcel under a hot grill until the bacon is cooked, about 6-7 minutes.
  • Serve immediately.
