We all have favourite soup Recipes and Red Lentil and Tomato Soup recipe is one of mine. Is it so, so easy and takes very little time if you have some ready made stock. Red Lentil and Tomato soup is very nutritious and another great reason for making this soup is, it is also relatively cheap to prepare.
If you have stock in the freezer, now is the time to use it. No stock, it is fine to use a stock cube for this recipe. Use vegetable stock if you want a vegetarian soup, otherwise chicken is good and I also like using the broth from when I have cooked a ham.

Yield: Serves 4
Ingredients:
- 7 oz/ 200g red lentils, washed
- 1 ½ pints/ 750 ml stock (see intro above)
- 3/4 lb/390g can chopped tomatoes
- Salt and pepper
- 1 generous tbsp fresh coriander (cilantro) or tarragon leaves
- Cream to garnish
Preparation:
- Place the washed lentils into a large saucepan or stockpot cover with the stock. Bring to the boil and cook, uncovered for 10 mins. Cover the pan, lower the heat and simmer for a further 15 mins.
- Place the lentils, stock, tomatoes (including any juice) and fresh herbs into a food processor and blitz until smooth.
- Return the soup to the pan and reduce slightly or until a thickness you like (II like my red lentil and tomato soup quite thick). Season with salt and pepper to taste and serve drizzled with a little cream.
