Fresh Mint Sauce

Fresh mint sauce is the traditional sauce to serve as an accompaniment to roast lamb dishes.

Prep Time: 10 minutes

Ingredients:

  • Bunch of fresh garden mint leaves, finely chopped
  • 4 tbsp boiling water
  • 4 tbsp white wine vinegar
  • 1 tbsp sugar

Preparation:

  1. Place the mint leaves in a heatproof jug, add the sugar and pour over the boiling water. Stir gently then leave to cool.

  2. Stir in the vinegar and taste. If too strong add a little more water.

  3. Serve with roast lamb dishes.
