Making shortcrust pastry is quick, simple and easy. Working out how much you need to cover a pie or line a tart tin can be confusing. How do you work out what you need?
Answer: If a recipe calls for a quantity of pastry, this is the weight of flour and fat, plus any water you have added. Here's a quick guide to help estimate how much to use.

  • 7 oz /200g flour = 10 oz/300g pastry, this will cover a 1 pint/600 ml dish, or line and cover a 7"/18cm pie.
  • 10 oz/300g flour = 14½ oz/ 450g pastry, this will cover a 2½- 3½ pint/ 1.5 - 2 liter dish, or line and cover a 9"/23cm pie.
  • 13 oz/ 400g flour = 1¼lb/ 600g pastry, this will cover a 4 pint/2.5 liter dish, or line and cover a 12"/30cm pie.
