I love Pancake Day or Shrove Tuesday as it is also called and have ever since I was a child. Back then we loved pancakes served simply with a little lemon and sugar and I haven't really changed much since, it is still my favourite way, though a dollop of homemade jam comes a close second. This is my Traditional Pancake Recipe, it is similar to Yorkshire pudding batter just thinner.
To make the perfect pancake takes a good pan, after many years my favourite pan broke earlier this year and I have been busy looking for a replacement. Here is the one I am experimenting with right now. Unlike my old (heavy) cast iron pan, this is a light ceramic pan and totally non stick making flipping so, so easy! I thought I could never replace my old pan, but I think I may just have.
