Time to Ice the Christmas Cake

I have been diligently feeding my Christmas cakes slugs of brandy for weeks and the time is fast approaching when they need to be iced, you need at least a few days if not a week ahead of Christmas, giving time for the marzipan to dry out before the icing goes on. So, if you haven't been topping them up, now is the time to crack on with it. Icing is not as daunting as you may think especially if you take a peek at the video below.

Which icing? For me with tons of jobs still to do in the run up to Christmas it will be the ubiquitous snow scene created with a flick of the palette knife on glossy royal icing but if you are a bit of a pro or have time to play, then fondant does produce a classy cake.
