Welsh lamb is renowned world wide, we know that leeks are a national symbol and a favourite vegetable. However, Wales is more than lamb and leeks, it also has a tradition of baking with wonderful cakes, buns and pancakes. The most famous cake is the fruity tea time treat of Bara Brith and this recipe comes from Gilli Davies. Gilli is the author of the renowned book of Welsh food, Flavours of Wales, published by Graffeg, which was nominated for a Gourmand World Book Award 2012.
