With the Christmas festivities all but over I wonder if you are feeling like me? I have over eaten, probably drunk a bit more than I should but also had a great time. Time for a sensible eating regime for a few days before the fun begins again on New Years Eve. I will forgo meat for heaps of fresh vegetables and salads and herb tea to replace alcohol.
One of my favorites at this time is the Pick Me Up Soup. The soup is essentially a fresh spinach soup with some vitamin packed greens of watercress and ruccola or rocket to (excuse the pun) boost me up. The spinach is packed with vitamin C, calcium, beta-carotene and vitamin A, with the watercress adding magnesium, zinc and iron as well as another boost of vitamin C. The addition of red onion and a hefty dose of garlic is for cleansing and the rocket/ruccola gives the whole a punchy, peppery bite. You can't help but feel better after a bowl or two.
The soup can be made in no time so make a fresh batch as you need it.
