I have that slight panicky feeling of Christmas just around the corner and in order to start preparing with abandon there are a few jobs I need to do to get me started. My first job and one I always seem to put off is clearing out the refrigerator and the freezer to make room for Christmas food. I don't know why I linger but part of the reason I suspect is I hate to find wasted food, it drives me crazy.
The vegetable drawer is usually the biggest culprit containing dribs and drabs of spinach, watercress, half carrots and onions and sweet potato. There's no need to waste these goodies, convert them into what I call my Fridge Soup. Sort vegetables into types (root vegetables, leafy greens, peppers and soft vegetables like tomatoes) and decide what goes with what then head to the stove. And, it means supper's all but cooked, always a good job done.
