I have been diligently feeding my Christmas cakes slugs of brandy for weeks and the time is fast approaching when they need to be iced, you need a few weeks ahead of Christmas, giving time for the marzipan to dry out before the icing goes on. So, if you haven't been topping them up, now is the time to crack on with it.
Royal of Fondant icing? You choose. For me with tons of jobs still to do in the run up to Christmas it will be the ubiquitous snow scene created with a flick of the palette knife on glossy royal icing but if you are a bit of a pro or have time to play, then fondant does produce a classy cake.
Finally, at an absolute squeeze, you do still have time to make a reasonably passable Christmas cake. It will not have the benefit of maturing or much time for feeding with brandy, but believe me, it will still taste great.
