I know it's only October and I have already mentioned it but it really is time to think about the Christmas Cake. A couple of months ahead really is the best time to make one as it gives them plenty of time to mature and as I like a boozy cake at Christmas it gives me plenty of time for feeding it at regular intervals with brandy.
My recipe for Christmas Cake may seem daunting with its long list of ingredients and 4½ hours cooking time but don't be put off, it is actually quite easy and simply needs a little organisation. Get all the ingredients weighed and lined up and prepare the cake tin before you begin, the rest is then straightforward. And, when you've finished you can tick of one job in the countdown to Christmas, always a pleasure.
