Following a big Sunday Lunch I had quite a lot of leftover veggies lurking in the fridge yesterday, not for long though. They were all tipped into melted butter in a large frying pan and cooked until heated right through, and just browning on the bottom to create a hearty Bubble and Squeak. Bubble and Squeak really is a delicious dish and has no definitive recipe as it all depends on what's left from lunch the day before. Ideally, it is good to have some mash or leftover roast potatoes, cabbage is a big favourite and some onion, but essentially fry what you want. Yesterday mine had mashed swede and carrot, cauliflower cheese and finely chopped roast potatoes. Served with a fried egg on the top and a dollop of HP Sauce, truly the food of the gods.
Bubble and Squeak is also known as Bubble or Fry. Irish Colcannon made from mashed potatoes, cabbage or kale and onion is similar to Bubble and Squeak as is Rumbledethumps in Scotland.
