Red Grouse

Tomorrow is August 12th which is better known as the Glorious 12th - the official start of the Game season. The Glorious 12th opens with grouse shooting and all across the moors of northern England and Scotland the "hunting-shooting-fishing" brigade will be out in force. So, if you are a Red Grouse you may want to think about disappearing for a while.

One of the great pleasures of the late summer and autumn is the arrival of game on the table. Grouse will make its appearance on the 12th, and by the 13th will be on the menu of many smart restaurants. It is however best to wait a while; for Game to be at its optimum it needs to be hung to develop taste and tenderness.Anyway, what's the hurry? Game in one form or another will be available right through the autumn, into the winter and early spring.

If you are lucky enough to bag a brace or two of birds or any other furred or feathered catch, then you can't do better than inspiration and instruction from one of the best books on Game cookery around today. Loose Birds and Game by Chef Andrew Pern is the book and you can read my review of it here.
