Sunshine for the Winter Months

Apricots are available year-round if you aren't fussy about where they come from. As I prefer them from these shore, I need to get busy as British apricots are at their peak right now. Cooking and preserve some of these little beauties now, will later bring some summer sunshine into the dark winter months.

Three of my favorite recipes using fresh apricots are Apricot Jam - so lovely with an afternoon tea or on toast for breakfast. Bottled Apricots keep for at least 6 months in their jars and are wonderful to open and either eat as they are with a dollop of ice cream or to use in pies, pastries and even in a Queen of Puddings. And finally. Apricot Liqueur, so, so simple to make and so, so lovely to drink especially as its at its best by Christmas. What a great way to toast the festivities.
