As the brief elderflower season moves along, it's important to get busy using them before they disappear. For me, the smell of early summer is the heady scent of the creamy white blooms of the elderflower which make a lovely flavouring to add into different foods or for making a delicious, sweet Elderflower Cordial.
Pannacotta - an Italian dessert extremely popular here in the UK - blends beautifully with elderflower Elderflower Cordial to create a delicate, scented dessert. Pannacotta which in Italian means cooked cream, is literally what happens in the recipe resulting is a soft wobbly cream, and with the addition of the cordial, a very delicious one.
The elderflower marries well with summer fruits and is especially good with cooked gooseberries.
