As the nights draw in and Bonfire Night gets closer it's time to make a batch - or two - of that yummy bonfire night must-have, Yorkshire Parkin. Parkin is essentially the Northern English form of gingerbread. Different parkin recipes are characterized by where they are made and Yorkshire Parkin, one the most famous, is made using oats.
There are many Parkin recipes but this is my favorite by Carol Wilson from her book Porters Seasonal Food; be sure to use fine or pin head oatmeal, any larger and the end product is dry and hard
