Christmas Countdown - Christmas Cake Time

Eek... it's only October but it is already time to think about Christmas.

This weekend is my designated weekend to make Christmas Cakes. Two months ahead is a good time as it gives the cake time to mature and as I like a boozy cake at Christmas gives me plenty of time for feeding it at regular intervals with brandy.

I love my Christmas Cake baking day as for me it is a start of the festivities and as the house fills with the aromas of the cake baking reminds the whole family of the pleasures to come.

The recipe for Christmas Cake may seem daunting with its long list of ingredients and 4½ hours cooking time but don't be put off; it is actually quite easy and simply needs a little organization. Get all the ingredients weighed and lined up and prepare the cake tin before you begin, then it becomes very straightforward. And, when you've finished you can tick of one job in the countdown to Christmas, always a pleasure.
